Cranberry Salsa

INGREDIENTS
1 jalapeño pepper
1 medium Granny Smith apple
2 green onions
2 limes
2 cups cranberries, thawed
3 tbsp sugar
1/2 cup fresh cilantro leaves
Crackers or tortilla chips
INSTRUCTIONS
Remove the stem from the jalapeño, then cut in half lengthwise. Remove the seeds and veins with a spoon and place the jalapeño into the Manual Food Processor.
Cut the ½ apple and 1 green onion into chunks and add to the processor. Process until finely chopped. Put into a mixing bowl. Repeat with remaining apple & green onion.
Add lime juice, 1 cup cranberries, sugar, and cilantro to the processor. Process until the cranberries are coarsely chopped, scraping down the sides of the bowl as needed. Add to apple mixture & stir well. Repeat with remaining cranberries.
Serve the salsa in a small bowl with crackers or chips.
Cook's Tips
It's also delicious served with turkey, chicken or pork. If you have leftovers, mix the salsa with cream cheese & use as a spread with slices of meat for a wonderful sandwich!!!
