Fathead Pizza (Gluten-Free & Keto)

Mouthwatering. So satisfying. All your favorite pizza flavors, layered on top of a crunchy, cheesy, keto crust that you can eat with your fingers!


Ingredients


Crust

1½ cups mozzarella cheese, grated

2 tbsp cream cheese

1 tsp white wine vinegar

1 egg

½ tsp salt

olive oil to grease your hands (I used 2 pieces of parchment paper instead)


Toppings

8 oz. fresh italian sausage

2 cloves garlic, pressed

1 tbsp butter or olive oil

½ cup unsweetened tomato sauce

½ tsp dried oregano

1½ cups mozzarella cheese, grated


Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Heat mozzarella (see tip below) and cream cheese in a 10" Stainless Steel Nonstick Skillet on medium heat or in a Classic Batter Bowl in the microwave oven. Stir until they melt together. Add the other ingredients and mix well.

  3. Cut a piece of parchment paper the size of your Large Sheet Pan. Use a Mix 'N Scraper to scoop the "dough" out of the bowl & onto the parchment paper & flatten it. Cover with a 2nd piece of parchment paper (same size).

  4. Use a marble rolling pin to flatten the dough between two sheets of parchment paper. Place on Large Sheet Pan.

  5. Remove top piece of parchment paper & discard. Prick the crust with a fork (all over) and bake in the oven for 10–12 minutes until golden brown. Remove from the oven.

  6. While the crust is baking, sautée the ground sausage meat in olive oil or butter in the 10" Stainless Steel Nonstick Skillet on medium-high heat. Drain the meat and press 2 cloves of garlic into it using the Garlic Press. Mix well.

  7. Spread a thin layer of tomato sauce on the crust using the Classic Scraper.

  8. Top the pizza with meat & other desired toppings. Finally, add plenty of cheese (see tip below).

  9. Bake for 10–15 minutes or until the cheese has melted. Sprinkle oregano on top for extra flavor. You can also use red pepper flakes & fresh grated parmesan.

  10. Slide pizza with lower piece of parchment paper onto the flat surface of the Large Grooved Cutting Board, then slide the paper out from under the pizza. Cut with the pizza cutter & serve.


Cook's Tip

You can buy pre-shredded cheese but it has some yucky ingredients that keep it from sticking together. It's fast and easy to buy cheese blocks and grate your own using the Microplane Adjustable Grater Set.


Use the coarse grater for softer cheeses like cheddar and mozzarella and the fine grater for harder cheeses like parmesan.
