Grandma Connie's Quick Chocolate Cake

INGREDIENTS

4 tbsp cocoa

1 cup water

1 cup butter

2 cups flour

2 cups sugar

1 tsp soda

2 eggs

2 tsp vanilla

½ cup buttermilk (or add a ½ tsp vinegar to half-n-half)


½ cup butter

6 tbsp buttermilk

4 tbsp cocoa

3 ½ cups powdered sugar

1 tsp vanilla

1 cup chopped nuts (optional)


INSTRUCTIONS

Add cocoa, water & butter to a sauce pan. Bring to a boil. While that's cooking, mix flour, sugar & soda in a mixing bowl. Pour hot cocoa mixture into the bowl with the flour mixture & stir with scraper (spatula).


Add eggs, vanilla & buttermilk. Mix by hand & pour into buttered 15x10x1 inch bar pan & bake 10-15 minutes at 400*.


Make the frosting in the same pan you boiled the cocoa mixture in. Add ½ cup butter, 6 tbsp buttermilk & 4 tbsp cocoa & cook until butter is melted. Remove from heat & add powdered sugar, vanilla & nuts. Stir well.


Remove cake from oven & allow to cool about 5-10 minutes, then cover with frosting. Serve warm or cold.
