Onion Soup

INGREDIENTS
4 large onions, thinly sliced
2 cups chicken bone broth
2 cups beef bone broth
4 tbsp ghee
5 garlic cloves, chopped or pressed
Mozzarella or Gruyere cheese for topping
Salt, pepper or other seasonings, to taste
DIRECTIONS
In a stock pot over medium heat, melt ghee and add thinly sliced onions. Cook until onions are lightly caramelized. Add bone broth & garlic. Season to taste.
Bring mixture to a boil and then reduce the heat. Allow to simmer for 30-50 minutes to give it more flavor.
Serve with Gluten-Free French Bread.
