Shrimp Cauliflower Salad

Ingredients

1 head of cauliflower

2-½ cups slim green beans, chopped

¾ cup mayonnaise

1 fresh lime, squeezed

⅓ cup fresh cilantro or dill, gently minced

4 green onions, chopped

2 lbs cooked shrimp, chopped

salt & pepper to taste


Directions

  1. In large stock pot bring 1 quart of water to a boil.

  2. Use chef's knife to chop beans, cilantro or dill, green onions and shrimp.

  3. Break cauliflower into pieces and blanch for 2 minutes, add green beans and cook for an additional minute. Drain vegetables in steel mesh colander and immediately immerse them in an ice bath for 2 minutes.

  4. In a large batter bowl, whisk mayonnaise, fresh lime, minced cilantro or dill and green onions.

  5. Fold in vegetables and shrimp.

  6. Salt and pepper to taste. Chill & serve.
