Sparkling Rosemary Limeade

Ingredients

1 cup lime juice (from about 6 limes)

3/4 cup sugar

Zest of 4 limes 

2 (4-inch) sprigs fresh rosemary, plus more to serve

4 to 6 cups chilled sparkling water


Directions

Stir the lime juice, sugar, lime zest & rosemary sprigs in a small saucepan and bring to a boil, then simmer for 5-10 minutes (stirring frequently) until the sugar is completely dissolved & the mixture has begun to thicken.


Remove or strain out the rosemary sprigs. Fill glasses with ice & add about 2 oz (¼ cup) of the lime syrup. Fill with chilled sparkling water & stir well. Muddle with a small sprig of fresh rosemary (or crush it with a rolling pin & add it to your limeade).


For a stronger flavor, add more lime syrup to your glass.
