Parmesan & Bacon Brussels Sprouts

INGREDIENTS
10 oz bacon, cut into strips
2 tbsp butter
2 lbs brussels sprouts, washed, bottoms trimmed & cut in half
Salt & Pepper to season
5 cloves garlic, pressed or finely chopped
1 ½ cups half-n-half or cream
1 ½ tsp cornstarch mixed with 1 tbsp water, to thicken sauce
⅓ cup freshly grated mozzarella cheese
¼ cup freshly grated parmesan cheese
INSTRUCTIONS
Fry the bacon until crispy & transfer to paper towel lined plate, set aside
Drain most of the bacon fat from the pan, leaving 1-2 tbsp. In the same pan, melt butter then add brussels sprouts and season with salt & pepper. Stir occasionally for about 6 minutes. The edges should start crisping & become slightly charred.
Add garlic & stir it in. Pour in the cream, reduce heat to low & let them simmer 3-4 minutes until tender. Add cornstarch & water mixture to thicken. Stir in bacon.
Top with mozzarella & parmesan cheese & bake at 375* for about 15 minutes until cheese is bubbly. Serve immediately.
